How to Make Crockpot Pepper Steak

This delicious, easy healthy recipe is great for winter and great to fit into your meal planning ideas. Crockpot pepper steak is a good family friendly dinner option that you can make in the slow cooker which makes it a quick dinner for families, meaning it’s easy to throw together once it’s done. You can even make it a low carb recipe by serving it over cauliflower rice!

Here is another simple dinner staple in our house! Crockpot pepper steak is one of those recipes I’ve been making for my family regularly. It’s delicious, simple to throw together, and consistently good!

My kids even love it!

Ingredients Needed for Crockpot Pepper Steak


Here is what you’ll need:

  1. 1-2 lbs of beef sirloin, cut into 2 inch strips
  2. Garlic powder (to taste)
  3. 3 tablespoons of vegetable oil
  4. 1 cube of beef bouillon
  5. 1/4 cup of HOT water
  6. 1 tablespoon of cornstarch
  7. 1/2 cup of chopped onion
  8. 2 large green bell peppers, roughly chopped
  9. 2 14.5 oz. cans of stewed tomatoes
  10. 3 tablespoons of soy sauce (or liquid aminos)
  11. 1 teaspoon of sugar
  12. 1 teaspoon of salt

How to Make Pepper Steak!

  1. First, cut your sirloin steak into 2 inch strips, trimming the fat off.



  2. Chop your onion and green peppers into chunks (doesn’t have to be super small).

  3. Sprinkle the sirloin with garlic powder to taste. We love garlic so I sprinkle it generously!



  4. In a large skillet, heat vegetable oil (or avocado oil) over medium high heat. Add sirloin and cook for 5 minutes or so, stirring occasionally. You’re just trying to lightly brown the outsides, not fully cook it.

    Note: if you have a crockpot that has the option to brown in the crockpot, do that! It will save you a step. Alternatively you can also use your instant pot if it has a slow cooker setting (this is what I did). This saves time as you can brown the meat in the instant pot and now have to worry about using a skillet. Less dishes are a win in my book!



  5. Mix the bouillon cube with hot water until dissolved, then mix in the cornstarch until dissolved.



  6. Once the meat is browned, transfer it to the slow cooker.



  7. Add in the bouillon, water, cornstarch mixture, as well as the peppers, onions, stewed tomatoes, soy sauce, sugar, and salt. Stir to combine.



  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  9. Serve over rice (or cauliflower rice if you’re trying to make it lower carb).
