Wash spinach and mushrooms, mince garlic
Heat 2 tablespoons of oil in a large skillet over medium heat
Add mushrooms and cook until tender, about 3 minutes
Remove mushrooms to plate and rinse skillet, return to stove
Add 1 tablespoon of oil and heat on medium heat
Cook garlic in oil until fragrant, about 1 minute
Add butter, chicken stock, cooking wine, Italian seasoning, salt and pepper. Cook for 2 minutes until melted/combined, stirring occasionally
Fill large pot with water and cook pasta according to instructions
Add spinach to skillet with sauce and cook for 2 minutes until wilted
Once pasta is done, drain and then add to skillet with spinach and sauce. Also add in mushrooms and parmesan cheese. Stir to combine
Serve with red pepper flakes to taste and additional parmesan cheese if desired.
